on skins, and maceration with floating cap at a controlled
temperature of about 28° C. Automatic pumping over of the
must three times a day. The wine is racked off before the
fermentation process has been carried out completely. Malolactic
fermentation take place at a temperature of about 20° C
after completion of alcoholic fermentation.
